Rhug Estate是北威爾斯一個佔地12,500英畝的著名有機農場，由Newborough勳爵管理，從1997年開始，將射擊紅腿鷓鴣引入其農場。莊園上的野鳥在傳統上一向為當地的生物多樣性管理和保護工作做出貢獻。Rhug Estate致力於推動有機系統，這是一種環境可持續的土地護理方式，因此有機農場的鳥類、蝴蝶和植物種類更加多樣化。有機標準也禁止使用使用基因改造技術。
鷓鴣素聞有「平民山珍」之名，對保護心臟和止咳等有益，甚至有人說「一鴣頂九雞」。鷓鴣有滋陰潤肺、健脾益氣、化痰止咳等功效，是高蛋白、低脂肪、低膽固醇的好食材。用鷓鴣煲出來的湯清甜美味不油膩，對脾虛久咳，痰多，虛火盛,，虛不受補人士特別有益。鷓鴣除了對氣管、久咳有用，平時補身都好好，因鷓鴣肉含有豐富蛋白質同人體必須的十幾種胺基酸。
小貼士：鷓鴣湯很滋補有益，小兒肺脾虛弱，容易傷風咳嗽，可常用鷓鴣煲湯作調理。但感冒有熱者不宜
