Grassmilk™ 芝士採用 100% 草飼牛的牛奶,小量手工製作,牛隻吃的都是有機牧場生長的草,絕不吃穀物。為了達到最佳風味,他們的奶並沒經均勻處理,頂部仍有一層厚厚的脂肪,過程會將牛奶於15秒內被溫和加熱到大約70°c

Beginning with unpasteurized milk from grassfed cows, organic valleys Grassmilk Raw Cheddar is aged a minimum of 60 days to develop its flavors. This is usually a white cheese, but its color can change with the seasons, as the cows graze on different plants throughout the year.
Exceptionally delicious, Grassmilk™ Cheese is handcrafted in small batches with milk from 100% grass-fed cows that only eat organic pasture and forages – never grain. To achieve the optimal flavor their non-homogenized milk (cream-on-top) is heat-treated gently to 158 degrees for 15 seconds.
These cheeses are semi-hard white cheddars, with top notes of grass and flower petal, and base notes of rich “umami” flavors like dark roasted pecans and butter-sauteed morels. Nutritional profiles of the Grassmilk used to craft Raw Grassmilk Cheddar Cheeses indicate higher levels of omega-3 fatty acids, conjugated linoleic acid CLA “the good fat”, and calcium.
